The production of ‘Rog – Ravea IGP Sangiovese Rosato’ makes use of a meticulous start with the mechanical harvesting of the Sangiovese grapes towards mid-September, favoring the first hours of the day to exploit the freshness. After destemming and pressing, the must is sent to ferment at 20C, in the presence of carefully selected pomace and yeasts, but for a limited period of 15 hours to guarantee an ideal pink colour.

This measured contact gives the wine its characteristic pink nuance. After this step, the wine follows the winemaking process typical of whites. The last refinement phase proceeds in steel containers, while bottling, carried out in summer, is designed to exclude any refermentations, thus ensuring the purity and integrity of the Sangiovese Rosato.

The Sangiovese vineyard, the beating heart of the ‘Rog’, has its roots in the land of Faenza, an area steeped in a rich oenological heritage. Near the historic Via Emilia, it extends over the gentle first hills of Faenza, specifically in the suggestive area of Campo Cross Monti Corali.

Elevated 80 meters above sea level, the vineyard is characterized by clay and loamy soil, distinctive of the region. These particularities of the soil enrich the wine with mineral notes and a unique complexity, giving the ‘Rogé’ a distinctive character and a wealth of nuances that celebrate its origin and history.
