Description

The production of Drago, our red wine from overripe grapes, follows a meticulous process that reflects the authenticity and traditional practices of Faenza.

The grapes are selected and harvested mechanically at the beginning of September, taking advantage of the morning coolness to preserve their qualities. In the cellar, these are subjected to destemming and pressing, starting the winemaking process.

At 20C, the must stops together with carefully chosen pomace and yeasts, a crucial step to maintain the characteristic sweetness of the fruit. During the 15 days of fermentation, two pumpovers are carried out per day, guaranteeing the homogeneity and quality of the final product. After soft pressing, the wine is refined in steel tanks until the moment of summer bottling, thus completing a cycle that combines innovation with tradition.

Our prized Drago comes from the vineyard located on the enchanting first hills of Faenza, in an area known as campo cross monti corals, near the famous Via Emilia, in the heart of Faenza, province of Ravea.

Located 80 meters above sea level, the soil of this vineyard stands out for its clayey and silty composition, a distinctive feature of the Faenza region. This land, rich in minerals and capable of maintaining humidity, creates optimal conditions for the vigorous development of the vines.

The quality of the soil not only favors the growth of the vine, but embellishes the wine with a unique depth and complexity, the result of an environment that enhances the virtues of this vine.
